1. Preparation of pickled ingredients for authentic Korean spicy cabbage

You need to prepare 2 Chinese cabbages, apples, large white pears, white radish, leeks, onions, garlic, ginger, chili powder, dried shrimps, sugar, glutinous rice flour, appropriate amount of salt, MSG, and sesame seeds.

2. How to pickle authentic Korean spicy cabbage

Step 1: Wash the cabbage, cut off the roots, and break the cabbage in the middle.

Step 2: Fill a basin with water, add salt and allow it to dissolve completely.

Step 3: Put half of the cabbage completely into the salt water and then take it out.

Step 4: Sprinkle salt on each layer of cabbage leaves and set aside.

Step 5: Peel the white radish and cut it into shreds, put it in a bowl, add salt water, and marinate the cabbage for ten hours.

Step 6: After ten hours, take out the cabbage, wring out the brine, drain and set aside.

Step 7: Peel the apples and pears and puree them in a blender. Mash the ginger and garlic.

Step 8: Put ginger and garlic paste, fruit puree, chili powder and chili noodles, sugar, salt, MSG and sesame seeds, as well as fish sauce and dried shrimps in a bowl and mix thoroughly.

Step 9: Use 50 grams of glutinous rice flour, water and 9 spoons of glutinous rice, heat it, stir constantly and put it into the seasoning bowl.

Step 10: After the chili sauce is fully prepared, spread the chili sauce on each piece of cabbage.

Step 11: Put it in a sealed container and store it for half a day.
