Bamboo fungus

Bamboo fungus is a kind of cryptogamous fungus parasitic on the roots of dead bamboo. It is shaped a bit like a net-shaped dried white snake skin. It has a cap of goose egg yolk, a snow-white cylindrical stipe, a pink egg-shaped stipe, and a delicate white net-like skirt at the top of the stipe that spreads from the cap to the bottom. It is called "the fairy of snow skirt", "the flower of mountain treasures", "the flower of fungi", and "the queen of fungi". Bamboo fungus is rich in nutrition, rich in fragrance, and delicious in taste. It has been listed as one of the "eight treasures of grass" since ancient times.

How to cook bamboo fungus

After removing the chicken butt and washing the chicken body, boil water first, immerse the whole old hen in the boiling water to remove the bloody smell, then take it out and rinse it.

Fill the casserole with water at once, put in the old hen, add a piece of chopped ginger and a small spoon of cooking wine, bring to a boil over high heat, then simmer over low heat. When stewing the chicken, to prevent the soup from overflowing, you can put two bamboo chopsticks on the casserole and cover the pot. After about three hours, the chicken soup has turned golden yellow. At this time, you can cut the bamboo fungus that has been soaked in water into sections, put it in the chicken soup, and stew it again. After the bamboo fungus is fully soaked in the flavor of the chicken soup, add salt according to your personal taste, turn off the heat, sprinkle a little chopped green onion to enhance the flavor, and it is ready to serve.

[Key points] Do not break the chicken skin when blanching the chicken; soak the bamboo fungus in water for a while to remove the strange smell. Do not put too much bamboo fungus, otherwise it will take away the flavor of the chicken soup; if there is a lot of fat in the old hen's stomach, dig out some of it and throw away, especially in the summer for those who like light food.

Bamboo fungus and red snail soup

[Ingredients] 400g red snail meat, 50g pea seedlings,

10 grams of bamboo fungus, appropriate amounts of cooking wine, salt, MSG, and scallion segments.

[Preparation] Wash and slice the red snail meat, blanch it in boiling water and remove it. Soak the bamboo fungus in clean water until soft, wash off the mud and sand, cut off the two ends, rinse it with clean water until it turns white, remove it and cut it into sections. Remove the impurities from the pea sprouts and wash them. Add clean water to a pot, add bamboo fungus, cooking wine, refined salt, and snail slices, bring to a boil, add pea sprouts and green onion segments, cook for a while, add MSG and remove from the pot.

Braised Chicken Loin with Bamboo Fungus

[Ingredients] 200g chicken waist,

8 grams of refined salt, 30 grams of ham, 2 grams of MSG, 30 grams of carrots, 30 grams of dried bamboo fungus, 500 grams of chicken broth, 30 grams of steamed egg yolk cake, and 5 grams of sesame oil.

[Preparation] Soak the dried bamboo fungus in cold water, wash it clean, soak it in cold water again, blanch it in hot water, take it out and cut it. Blanch the carrots and lettuce in hot water, cool it, and cut it into elephant eye pieces. Slice the ham and steamed egg yolk cake.

Clean the chicken loins, blanch them in chicken broth, and cool them in cold water. Use a knife to cut a hole in the middle of the chicken loin, tear off the film, and cut it in half along the blade. Put it in a bowl, add 100 grams of chicken broth and 2 grams of salt, and steam it in a steamer for 10 minutes.

Place a wok on high heat, pour in 400 grams of chicken broth, then add ham, steamed egg yolk cake, carrots, and lettuce. Bring to a boil, skim off the foam, squeeze out the water from the bamboo fungus and put it in. Add 6 grams of salt, MSG, and pepper to taste. Remove from heat and pour into a soup bowl. Pour in the steamed chicken loin with the broth and drizzle with sesame oil.

Soak the bamboo fungus in cold water for about 2 to 3 hours. After it is fully swollen, wash it repeatedly with clean water to remove mud, sand and impurities, and then soak it in cold water for later use.
