Material

When making mushroom chili sauce at home, you need to prepare five mushrooms, six or seven dried red peppers, a large spoonful of Danxian bean paste, an appropriate amount of garlic, spicy soybean paste, two spoonfuls of ginger, rock sugar, light soy sauce, and some green onions. Finally, you also need to prepare a small amount of pepper and table salt.

Homemade step-by-step tutorial

1. Soak the prepared mushrooms in warm water in advance, then wash them with clean water and cut them into dices. Remove the prepared garlic, cut the skin into minced garlic, cut the onion and ginger into thin strips, and chop the prepared dried red pepper into fine pieces for later use.

2. Put the wok on the fire, add cooking oil after heating, then add shredded green onion, ginger and minced garlic, add 1/2 of the minced garlic, then add chopped chili, stir-fry over low heat until fragrant. Then put the chopped mushrooms into the wok and stir-fry evenly.

3. After the diced mushrooms in the pot are fried soft, add the prepared Danxian bean paste and spicy soybean paste as well as rock sugar and appropriate amount of salt, stir-fry them quickly and evenly to dissolve all the rock sugar.

4. After the rock sugar melts, add the remaining minced garlic, then add the peppercorns to enhance the flavor. Stir-fry for a while and then turn off the heat. Let it cool down, then take it out and put it in a clean glass bottle. Store it in a sealed container and you can take it out and eat it whenever you want.

5. You can also use fresh shiitake mushrooms when making shiitake mushroom chili sauce at home, and it is best to only use the mushroom caps when making it. This way, the shiitake mushroom chili sauce will taste particularly good.
