How to make pickled fish

1. After cleaning the grass carp, make a cut on one side of the fish, at the head and the tail, and start slicing the fish. After the fish is sliced, put it in a bowl, add half a teaspoon of salt, a spoonful of white pepper, 15 grams of rice wine, 10 grams of starch and an egg white to marinate.

2. Heat the oil in the pan, add the pepper, ginger, garlic and pickled pepper, and stir-fry until fragrant. Then add the chopped sauerkraut and stir-fry for about three minutes. Remove the fish head and bones, add a small amount of rice wine and stir-fry, which will make the sauerkraut fish soup more delicious.

3. After doing all the above, transfer all the seasonings in the pot into the soup pot, add an appropriate amount of water, boil it for 15 minutes, and start adding fish fillets. Put the fish fillets in one by one and do not stir them.
