When people eat raw cowpeas, the toxins have a strong irritating effect on the gastrointestinal tract, causing mild abdominal discomfort, and severe symptoms of poisoning such as vomiting and diarrhea, especially in children. Therefore, it is necessary to fully heat and cook or fry them, or heat them over high heat for more than 10 minutes to ensure that the cowpeas are cooked thoroughly, so that the harmful substances will decompose into non-toxic substances.
