1. Cut the green onion into flowers, cut the ginger into rice grains, and chop the garlic into rice grains;

2. Remove the stems of the tender eggplants, peel them, and cut them into 3 cm thick slices, then into 3 cm long diagonal strips;

3. Add soup, salt, sugar, balsamic vinegar, MSG, chili sauce, sesame oil, 15g wet starch (8g starch plus 7g water) and chopped green onion to make juice;

4. Heat the oil in a pan until it is 70% hot, add the eggplant and fry until it turns golden brown, then drain the oil in a colander;

5. Leave some oil in the pan, add pepper powder, ginger and garlic and fry for a while, then pour the eggplant into the pan;

6. Add cooking wine, then pour in the sauce, stir a few times and serve on a plate.
