When making bacon, you can prepare two kilograms of fresh pork belly, an appropriate amount of peppercorns or table salt, and some white wine.

Steps to make salted bacon

1. Put the wok on the fire and dry it. Put the prepared salt and peppercorns into the wok. Stir-fry slowly over medium-low heat until the salt is completely heated and emits the aroma of the peppercorns. Turn off the heat and keep the peppercorn salt for later use.

2. Cut the fresh pork belly into long strips and place it on a plate. Then apply the fried pepper salt repeatedly on the surface of the pork belly, and spread it evenly with your hands to ensure that there is enough pepper salt on every side of the meat.

3. Put the meat with pepper and salt into a sealable container, add a small amount of white wine, press it with heavy objects such as stones, and marinate it in a cool place. Turn the meat over once a day.

4. After five or six days, take the meat out of the jar, poke a hole in the meat with scissors, and then string all the meat together with a rope and hang it in the sun for a day. Move it to a cool place the next day and let it dry slowly. After a week, the homemade bacon will be ready. You can store it in the refrigerator or freeze it directly. Take it out when you want to eat it and eat it directly.

5. There is one thing you need to pay attention to when pickling bacon at home. That is, the fresh meat you buy cannot be washed with water, otherwise the meat will easily deteriorate during the pickling process after coming into contact with raw water. If you are afraid of unhygienic conditions, you can wash the bacon with clean water before eating it.
