How to make braised pork with dried beans

1. Cut the pork belly into small pieces, soak the dried cowpeas in warm water for 2 hours, rinse them with water after they are softened, cut them into small pieces (any length), slice the ginger, and chop the green onions into small pieces.

2. Put the pork belly into boiling water and blanch for 2 minutes, then remove it, rinse with water to remove the floating foam and drain the water.

3. Pour a little oil into the pot and heat it on low heat. Add rock sugar and stir fry until it melts and turns brown, i.e. caramel color.

4. Pour in the blanched meat and stir-fry until the meat is colored

5. Pour enough boiling water, light soy sauce, dark soy sauce, scallion, ginger slices, and star anise, bring to a boil over high heat, then simmer over low heat for about 1 hour

6. After 1 hour, add the beans, stir well, and continue to simmer for about 20 minutes. Stir a few times in the middle to let the beans absorb the flavor. If the soup is too juicy, turn up the heat to reduce the juice and add appropriate amount of salt according to taste.
