How to make braised eggplant more delicious and tasty? Today I will tell you several ways to make braised eggplant:

Braised eggplant first method

[Ingredients] 2 long eggplants, 100 grams of pork belly, 1 chili, 5 cloves of garlic, some oil

[Seasoning] 2 spoons of soy sauce, 1 spoon of sugar, 2 spoons of wine

【practice】

1. Cut the eggplant into 4 strips vertically, then cut into sections horizontally. Cut the pork belly into shreds.

2. Slice the chili pepper and crush the garlic.

3. Heat the oil, put the eggplant into the pan and fry it, then take it out immediately.

4. Put two spoons of oil in the pot, stir-fry the chili and garlic first, then add the shredded pork and stir-fry until it changes color, then add the fried eggplant, add soy sauce, sugar, wine and a little seasoning, then serve.

Braised Eggplant Second Method

【Ingredients】2 eggplants, 2 taels of pork, 1 green onion

【Ingredients】Oil (15 tablespoons), salt (1/3 tablespoon), soy sauce (1 tablespoon), chicken powder (1 tablespoon), cornstarch (1 tablespoon)

【practice】

1 Wash the eggplants, remove the heads and tails, cut into dice, soak in clean water, drain, sprinkle with a little starch and mix well. Remove the heads and tails of the green onions, wash and cut into sections.

2 Wash and slice the pork, chop it into paste, add 1/2 tablespoon soy sauce, 1 tablespoon cornstarch, 1/2 tablespoon oil and 1/3 tablespoon chicken powder, mix well, and marinate for 10 minutes

3 Pour 3 tablespoons of oil into the pan and heat it up, add the minced meat and stir-fry until the meat turns white, then remove from the pan and set aside.

4 Continue to add 10 tablespoons of oil, sauté the scallion segments, add the eggplant and stir-fry quickly over high heat, add 5 tablespoons of water and stir-fry until the eggplant releases water and becomes soft, about 5 to 6 minutes.

5 Pour in the minced meat and stir-fry for 1 minute, then season with 1/3 tbsp salt, 1/5 tbsp chicken broth and 1/2 tbsp soy sauce, and serve!

Braised Eggplant Third Method

【raw material】

1. Cut one pound of eggplant into dice, mix with one spoonful of salt and marinate for 20 minutes.

2. Two spoons of cooking wine.

3. Two star anises.

4. Chop three green onions.

5. Slice three cloves of garlic.

6. Two cilantro, chopped.

7. Put one spoon of fermented soybeans, one spoon of soy sauce, one coffee spoon of sugar and one coffee spoon of chicken essence in a bowl.

8. Add one tablespoon of starch to water and mix into sauce.

1. Squeeze out the water from the pickled eggplant pieces.

2. Heat oil in a pan until it is 30% hot, pour in eggplant pieces and stir-fry until they turn yellow and serve on a plate.

3. Wash the pot, add a small amount of oil, and heat it to 50% hot. Add chopped onion, garlic slices, and star anise and stir-fry until fragrant. Pour in the eggplant pieces and stir-fry.

4. When frying the eggplant cubes, add cooking wine, all the seasonings in the bean curd bowl, and half a cup of soup or water and bring to a boil, then thicken.

5. Sprinkle with coriander.

Braised Eggplant Method 4

【Main ingredient】Eggplant

[Supplementary ingredients] Mushrooms, tomatoes, fungus, onions, ginger, garlic

【Seasoning】MSG, sugar, soy sauce, vinegar, cooking wine, starch

1. Peel the eggplant and cut into thick slices, cut the surface lightly, and then cut into dices. Put them into the oil pan and fry until golden.

2. Add a little soaked black fungus and shiitake mushrooms to the chopped green onion, ginger and garlic, add cooking wine, soy sauce, sugar, vinegar and MSG and mix well. Leave some oil in the pot, pour in the prepared juice, thicken with water starch, add tomatoes and eggplants and stir-fry quickly and evenly.
