How to make kelp shrimp cakes

The wakame shrimp crackers are really delicious. My son and husband really like the wakame shrimp crackers I make. I am in a good mood today so I will share the recipe with you:

Ingredients for Wakame Shrimp Cake

Wakame 70G Shrimp 130G

140g cooked rice, a little flour

1 egg 2 tsp mirin

1 tsp salt A pinch of pepper

4 tablespoons white miso 6 tablespoons Japanese soup stock

2 tablespoons tomato sauce 10g melted butter

How to make Wakame shrimp cake

1. Soak the wakame, wash it and cut it slightly

2. Remove the shrimp shells, heads and tails, remove the sand line, rub the shrimp with a little salt and starch, then wash with water and chop into small pieces.

3. Mix rice, wakame, shrimp, the above seasonings according to the required amount and a little flour thoroughly

4. Put a little oil in a non-stick pan, take an appropriate amount of the ingredients in step 3, put them into the pan and shape them into pancakes, fry them on low heat on both sides until golden brown

5. Mix all the ingredients for the seasoning sauce and eat with the bread.

Tips

No soup stock, use water

There are many types of Japanese miso paste. If you can buy Saikyo white miso, I strongly recommend using it.

Rub the shrimp all over with a little salt and starch to restore the freshness of the frozen shrimp, remove the fishy smell, and have a sterilizing and cleaning effect.

You can use leftover rice, freeze it in a plastic bag in the refrigerator, and divide it into portions for easy taking out. The taste will not change after thawing.

1. Soak the dried wakame in cold water for about 20 minutes, or until the wakame is softened, then wash the wakame with clean water.

2. Place the wakame on a strainer. Bring a pot of water to a boil, then pour the water over the wakame to scald it and disinfect it. Then drain the wakame.

3. Pour a little wine into the pot, add ginger slices and scallions, and boil the water over high heat.

4. When the water boils, add the shrimps and remove them after they change color. Rinse with cold water

5. Squeeze the wakame and put the shrimp in. Pour in the Japanese salad dressing or any other dressing you like. Mix well and marinate in the refrigerator for about 2 hours.

6. Slice the cucumber and marinate it with a little salt for 15 minutes. This will make the cucumber slices crisper.

7. After the wakame is marinated, add the cucumber slices to the wakame and mix well.
