Nutritional Value of Broccoli

Broccoli Introduction

Broccoli is between cabbage and cauliflower, with a green or purple fat flower ball at the top of the main stem. Broccoli originated from the Mediterranean coast of Europe. It is recommended by Time magazine as the fourth of the top ten healthy foods because of its rich nutrition and excellent taste. The quality requirements of broccoli are: dark green color, crisp texture, loose leaves, no rot, no insect damage.

Nutritional value of broccoli

1. The most significant effect of broccoli is that it has anti-cancer and anti-cancer effects. Cauliflower contains more vitamin C than Chinese cabbage, tomatoes, and celery, especially in the prevention and treatment of gastric cancer and breast cancer. Studies have shown that the level of serum selenium in the human body drops significantly when suffering from gastric cancer, and the concentration of vitamin C in gastric juice is also significantly lower than that of normal people. Cauliflower can not only supplement a certain amount of selenium and vitamin C, but also provide rich carotene, which can prevent the formation of precancerous cells and inhibit the growth of tumors. According to research by American nutritionists, there are also many indole derivatives in cauliflower. This compound has the effect of reducing the level of estrogen in the human body and can prevent the occurrence of breast cancer. In addition, studies have shown that an enzyme extracted from cauliflower can prevent cancer. This substance is called carotene, which has the effect of increasing the activity of carcinogen detoxification enzymes.
