Bamboo shoots are the edible part of the young plants of the grass family, such as moso bamboo, without the sheath. They are mainly grown in Hunan, Hubei, Jiangxi, Zhejiang and other provinces.

There are many types of bamboo, and moso bamboo is one of them. Its underground stems are called "bamboo whips", which are thick and horizontal in the soil, with nodes, and the buds on the sides of the nodes are bamboo shoots.

The bamboo shoots are plump, cylindrical and pagoda-shaped, with a pointed top and a round bottom, and a node in the middle; the veins and hairs on the outer shell are yellow; the flesh is white or light yellow, tender and fresh.

Fresh bamboo shoots are divided into winter bamboo shoots and spring bamboo shoots. Winter bamboo shoots are dug in winter when the bamboo shoots have not yet emerged from the ground, and their quality is the best; spring bamboo shoots are dug in spring when the bamboo shoots have already emerged from the ground, and their quality is lower.

The quality requirements for bamboo shoots are: fresh and tender, thick and with short internodes, milky white or light yellow flesh, free of mold, disease and insect pests.
