About Celery

Celery has a strong aroma, clears the head, and is better at lowering blood pressure and lipids than water celery. People with high blood pressure and high blood lipids should eat it regularly. People with stranguria, urinary tract infection, and prostatitis should eat it regularly. The stems and leaves contain apigenin, bergamot lactone, organic acid, carotene, vitamin C, sugar, and butylphthalide derivatives with a special smell in the volatile oil. Celery contains acidic antihypertensive ingredients. It has been reported that celery has a significant antihypertensive effect, mainly through the aortic arch chemoreceptors.

Celery (Apium graveolens) is the whole herb of the Apiaceae plant, Apium graveolens, a biennial herb of the Apiaceae family.

Celery is native to the Mediterranean coast. It has a long history of cultivation in my country and is widely distributed in most parts of the country. Xuanhua in Hebei, Weixian in Shandong, and Shangqiu in Henan are all famous places for producing celery.

Celery is available all year round. Celery can be divided into two types: Chinese celery (Chinese type) and European celery (European type). Chinese celery has large, hollow roots, slender petioles, green or purple petioles, coarse fibers, strong fragrance, and less edible parts. European celery has small roots, tall plants, wide and fat petioles, solid, less fragrant, crisp and tender, and more edible parts.

The quality requirements for celery: uniform in size, without old stems, yellow leaves and dirt, with no rust or insect damage on the petioles, bright green or white in color, and plump and tender petioles.

How to make delicious celery

Celery and Bean Curd

【Ingredients】Celery, shredded tofu, vegetable oil, sesame oil, peppercorns, dried red peppers, salt, vinegar, MSG

[Method] Wash and cut celery into strips and boil in water. Cut tofu strips into inch-long pieces and boil in water for 2-3 minutes. Remove from the water and mix with celery strips and let cool for later use. Heat the oil over low heat until it is 60% hot. Add appropriate amount of Sichuan peppercorns to the pot. Once the peppercorns smell, add the broken dried red chilies. Once the spicy smell comes out, pour the oil on the celery and tofu strips. Add appropriate amount of sesame oil, MSG, salt and vinegar. Adjust according to taste.

[The trick] is to stir-fry the oil in the pan - heat the oil to 60%, put a proper amount of peppercorns in the pan, as soon as the peppercorn smell comes out, put in the broken dry red peppers, as soon as the spicy smell comes out, pour the oil on the celery and tofu shreds.

Sweet and Sour Celery

[Method] 500g celery, sugar and vinegar. Remove the leaves and stems of the tender celery, wash and blanch them in boiling water. When the stems are soft, remove them, drain the water and cut them into inch-long pieces. Add sugar, salt and vinegar, mix well, drizzle with sesame oil and serve.

[Features] This dish is sweet and sour, and is appetizing. It has the effects of lowering blood pressure and lipids. Patients with hypertension can eat it regularly.

Celery Stir-fried Dried Tofu

【Ingredients】300g celery, 6 pieces of dried tofu, 2 chilies

【Seasoning】 Salt, MSG, sesame oil, pepper, a little

[Key points] Celery gets old easily, so don’t stir-fry it for too long

【Method】A. Wash all the ingredients, remove the leaves from the celery and cut into small pieces, cut the dried tofu into pieces of the same size as the celery, and cut the chili into small pieces for later use. B. Heat 2 tablespoons of garlic in a pan, then add the chili and sauté until fragrant.

Western-style celery milk soup

[Method] 150g celery, 50ml butter, 150ml milk, and appropriate amount of flour. Wash the celery, remove the leaves and cut into sections, boil 150ml water, add salt, butter and 2 spoons of flour into the milk, pour into the celery soup, and boil it.

The British Daily Mail reported on May 20 that a new study published in the Proceedings of the National Academy of Sciences showed that the chemical luteolin in celery can help patients with brain diseases such as Alzheimer's fight against diseases.

Luteolin is a flavonoid chemical that has anti-inflammatory properties. Scientists at the University of Illinois in the United States studied the effects of luteolin on brain immune cells called microlegia.

They have shown in animal experiments that the chemical can reduce inflammation in the brain caused by bacterial toxins. Appropriate doses of luteolin can be used to treat a variety of brain diseases, including Alzheimer's and Creutzfeldt-Jakob disease.
