Materials preparation:

1. Select 10 catties of fresh green pepper, 0.4 catties of garlic, 0.4 catties of Sichuan peppercorns, and 0.4 catties of ginger.

2. 1 jin of salt, 5 jin of soy sauce, 0.6 jin of peanut oil, a little sesame oil, 0.8 jin of sugar, 0.8 jin of white wine

3. Clean and dry jar

4. Wash the green peppers and cut them into pieces of about 1 cm (don't cut them too small or too fast) or pickle them whole. If you want to remove the seeds, cut a small hole at the tip of the pepper and set it aside.

5. Peel all the garlic, flatten them with a kitchen knife (don't crush them too much), and set aside.

6. Wash the ginger, cut into shreds and set aside.

 

Steps for pickling peppers :

1. Remember to dry the surface moisture of the washed green peppers, then put them in a dry and clean jar, stack them in the order of a layer of peppers and a layer of salt, press the peppers tightly with a heavy object, and drain the water after marinating for 3 hours.

2. Pour peanut oil into a hot pan and bring to a boil. Then pour in peppercorns, sugar, salt and soy sauce. When stir-frying is almost done, remove from the pan and let cool.

3. Pour the green peppers that have been drained of salt water and the sauce that has cooled down into the pot (the pot must be clean and dry), then add the prepared white wine, MSG, ginger, garlic, and sesame oil and mix well.
