1. Prepare the ingredients. Drain the cleaned peppers, spread them out to dry, and completely dry the surface of the peppers, or wipe the surface of the peppers dry. Remember that there must be no moisture on the surface of the peppers.

2. Remove the stems of the dried peppers and chop them finely (don’t chop them too finely (disinfect the cutting board and knife in advance, and make sure they are free of oil and water).

3. Chop ginger and garlic into fine pieces.

4. Put the chopped chili, garlic and ginger into a clean, oil-free and water-free large bowl, add salt and sugar and mix well.

5. Stir well.

6. Place in a container that has been sterilized with boiling water and is free of oil and water.

7. Pour in white wine.

8. Seal the container and place it in a cool and ventilated place at room temperature overnight to allow it to ferment. Then place it in the refrigerator and store it for about 7 days before eating.
