How to pickle radish

Radish is a major vegetable harvested in late autumn and early winter in Linzhou rural areas. As the old saying goes, "Eat radish in winter and ginger in summer, and you don't need a doctor to prescribe medicine", which shows that radish is not only a vegetable, but also has medical and health functions.

White radish can be eaten raw or cooked. Cooked radish is common, but today we will talk about eating radish raw. In addition to aiding digestion, eating raw radish has a strong anti-inflammatory effect, and its spicy ingredients can promote gastric juice secretion and adjust gastrointestinal function. I like to eat raw white radish slices when eating hot pot, and I also like to pickle raw white radish at home.

Let’s cut the crap and get to the point.

How to pickle radish

Lee's pickled radish recipe:

Ingredients: 10 jin of radish, sliced;

Accessories: 1.2 catties salt, 4 liang sugar, 3 liang MSG, 2 liang liquor, 2 liang ginger, 2 liang garlic, 2 liang chili pepper;

Seasoning: 1 jin of aged vinegar, 2 jin of Dongguan soy sauce (ordinary soy sauce, note that you cannot use Haitian soy sauce, otherwise the pickles will become black and not tasty), a handful of peppercorns and fennel.

Method: Wash the radish, drain the water, and slice it. Mix the vinegar and soy sauce, add the pepper and fennel, put it on the fire to boil, and let it cool. Then add the radish slices and all the auxiliary ingredients. Everything is ready. It can be eaten immediately, and it is better to leave it for a day.

Of course, if you have Jerusalem artichokes, it would be better to pickle them together with radishes. It is also OK to add cooked peanuts, soybeans, etc. to make a mixed pickle. Other seasonings can also be adjusted according to your taste.

The above ratio is just a reference. If there are fewer people, you can marinate less according to the ratio and marinate as you eat.

Well, that's it. Today I have a blog, and everyone has pickled radishes. If you don't have radishes at home, you can pick them from the pile below.
