Ingredients: 10 jin of radish, sliced;

Accessories: 1.2 catties salt, 4 liang sugar, 3 liang MSG, 2 liang liquor, 2 liang ginger, 2 liang garlic, 2 liang chili pepper;

Seasoning: 1 jin of aged vinegar, 2 jin of Dongguan soy sauce (ordinary soy sauce, note that you cannot use Haitian soy sauce, otherwise the pickles will become black and not tasty), a handful of peppercorns and fennel.

Method: Wash the radish, drain the water, and slice it. Mix the vinegar and soy sauce, add the pepper and fennel, put it on the fire to boil, and let it cool. Then add the radish slices and all the auxiliary ingredients. Everything is ready. It can be eaten immediately, and it is better to leave it for a day.

Of course, if you have Jerusalem artichokes, it would be better to pickle them together with radishes. It is also OK to add cooked peanuts, soybeans, etc. to make a mixed pickle. Other seasonings can also be adjusted according to your taste.
