One day when I was about to cross the road after leaving the morning market, I saw an auntie who was selling some things she grew herself in front of her. I think it was what we call "ghost ginger", which seems to be called "Jerusalem artichoke" in the south. It looked like young ginger and was delicious, so I bought a bag.

The Sichuan nanny at home said that I could pickle some vegetables.

So under her instruction, I found the manual crusher that I bought at the trade fair and shook it to crush the chilies and peppercorns. Because it was difficult to shake the peppercorns, I didn't get much. Later, the nanny said that it would taste better if I had more.

Wash the Jerusalem artichokes and let them air dry for a day or so until there is no water on the surface. Cut them into thin strips, add salt and crushed chili peppers, and according to your taste, you can also add sesame oil and monosodium glutamate, then put them into the pot. Seal with plastic wrap.

Put it in a cool place for a month and then you can eat it.

It is very crispy, with the spiciness of chili but not ginger, and the fragrance of ginger. My whole family likes it very much, including me who doesn’t like ginger.

The same method can also be used to pickle radish and other things. The nanny said that in Sichuan, this method is known to everyone. It is still very new to me.
