Ingredients:

20 grams of snow frog oil, 250 grams of rock sugar, 500 grams of papaya, 50 grams of white sugar, and 1000 grams of water.

Preparation method:

(l) Put the clam oil in a large bowl and soak it in 70℃ warm water for about 2 hours, then change the water (soak and change the water twice in a row). Then rinse it with clean water, pick out the black spots and impurities, wash and dry it, put it in a bowl, add 50 grams of sugar and 20 grams of clean water, put it in a steamer, cook for about 1 hour and 30 minutes, take it out and drain the water for later use.

(2) Peel the papaya skin, cut it into 6 strips with a knife, remove the seeds, and then cut it into angular shapes with a knife. Place it on a plate and steam it in a steamer for 8 minutes, then take it out and set aside.

(3) Clean the wok, add clean water, and boil the rock sugar. Boil until the rock sugar is completely dissolved and foam appears on the surface of the soup. Scoop out the foam, then pour the steamed clam oil and papaya pieces into 10 small bowls, then pour the boiling sugar water into them.

Braised Spare Ribs with Green Papaya

Material:

Half a raw papaya 600 grams of small ribs 2 scallions 2 slices of ginger

Seasoning:

1. 3 tablespoons soy sauce paste 1 tablespoon wine 1 tablespoon rock sugar

2. 1 tsp cornstarch 1 tsp sesame oil

practice:

1. Peel and remove the seeds from the raw papaya, wash and cut into dices. Cut the spareribs into 2cm*2cm cubes for later use.

2. Heat a wok and add 1/3 cup of oil. Stir-fry shallots and ginger. Add rock sugar and fry until golden brown. Add spareribs and fry until the skin is browned.

3. Add seasoning (1) and raw papaya to the pot, stir-fry, and add water to cover all the ingredients. Cover the pot and simmer over low heat for 45 minutes. Thicken with cornstarch and add a little sesame oil before removing from the pot.

Abalone, Shark's Fin and Papaya Boat

Main ingredients: 150 grams of soaked shark fin, papaya, 500 grams of pig's feet, 500 grams of ribs, 600 grams of old hen, 150 grams of pig skin, and 100 grams of ham bones.

Ingredients: ginger, onion, and wine.

Method: First take 150 grams of soaked shark fin, put it into a pot of boiling water with ginger, scallion and wine, shred it, take it out and rinse it with clean water; take a large sand pot, put bamboo strips at the bottom, put the shredded shark fin on the bamboo strips, and then put another bamboo strip on the shark fin; chop 500 grams of pig's feet, 500 grams of ribs, 600 grams of old hen, 150 grams of pig skin, and 100 grams of ham bones into large pieces, blanch them in boiling water, rinse with clean water, take out and drain, put them on the shark fin padded with bamboo strips, pour in 2500 grams of light soup, add Shaoxing wine and fine salt, put in the bundled scallions and coriander heads, cover the pot, bring to a boil and simmer on medium and low heat for about 4 hours. Take a papaya, lay it flat and cut off the top quarter, dig out the pulp from the remaining three quarters of the papaya, carve patterns on the cut to make it into the shape of a wooden boat, put the stewed shark fin with seasoning into the wooden boat, then put it into the steamer and stew for about 10 minutes until the papaya is fragrant.
