How to make lotus leaf ice porridge

1) Wash Thai fragrant rice and soak it in clean water for half an hour. Wash both sides of the fresh lotus leaf, fold it into a fan shape, and cut off the edges (so that it can form a circle when unfolded in the middle). Cut the edges of the lotus leaf into small pieces.

2) Pour clean water into the pot and bring to a boil over high heat, add all the lotus leaves and blanch them for 2 minutes. Then discard the water used to blanch the lotus leaves.

3) Put the blanched lotus leaf pieces into the pot, add clean water, bring to a boil over high heat and continue to cook for 5 minutes until the water turns orange (Picture 5). Then pour in the soaked Thai fragrant rice and mix well.

4) Add the washed lotus seeds and wolfberries. Reduce the heat to medium-low, cover the pot with a round lotus leaf, and cook for about 30 minutes.

5) After the porridge is cooked, let it cool naturally, cover the pot and put it in the refrigerator for 2 hours before drinking for the best taste.

6) If you like sweet food, add rock sugar after the porridge is cooked, stir well, then let it cool naturally and refrigerate.
