Ingredients for preserved egg and fish fillet porridge

150g rice, 300g grass carp, 2 preserved eggs, a little ginger, 1 coriander, 5g cooking oil, some pepper, 0.25 tsp salt, 0.5 tsp sugar

How to make preserved egg and fish porridge

1. Wash the rice and mix it with a small amount of oil; peel and crush a preserved egg, add a little oil and mix it with the rice, peel the other preserved egg and cut it into small pieces; wash and cut the ginger into shreds; wash and cut the coriander into sections;

2. Remove bones from grass carp and cut into thin slices. Add shredded ginger, salt, sugar and pepper and mix well.

3. Put the rice into the porridge pot, add water and bring to a boil, then turn to medium heat and cook for about 30 minutes;

4. After the porridge is cooked, add the grass carp slices and preserved egg cubes and cook briefly;

5. Finally, add salt and pepper to season, and sprinkle with shredded ginger and coriander.

Things to note when making preserved egg and fish fillet porridge

Unique flavor, salty and delicious. Do not cook the grass carp meat for too long to prevent the fish fillet from being cooked into pieces. The nutritional content of preserved eggs is quite similar to that of ordinary eggs, and the pickling process has been subjected to the action of strong alkali, so the protein and lipids are decomposed, becoming easier to digest and absorb, and the cholesterol is also reduced. Iron supplements are used for pickling, so the iron content is also higher. However, the vitamin B group and essential amino acids are destroyed.

Do preserved eggs contain lead?

During the traditional pickling process, heavy metals such as lead or copper are often added to the pickling liquid to coagulate the protein. According to the regulations of the Taiwan Department of Health, the lead content of preserved eggs shall not exceed 2ppm and the copper content shall not exceed 8ppm. The agricultural administration also guides the industry to produce high-quality preserved eggs, so that the lead content shall not exceed 0.3ppm and the copper content shall not exceed 5ppm. Therefore, the pickling liquid of qualified manufacturers does not contain heavy metals, or the content is very small.
