Chicken porridge shark fin ingredients

Ingredients: 250g of water-soaked chicken wings. Ingredients: 100g of chicken breast, 2g of ham, 2g of egg white. Seasoning: 20g of ginger juice, 40g of cooking wine, 650g of chicken soup, 150g of second soup, 5g of refined salt, 4g of chicken powder, 1g of MSG, 75g of salad oil, 50g of cornstarch.

Chicken porridge shark fin operation steps

(1) Boil the fins in water and add 20g ginger juice. Then add 150g soup stock, 20g cooking wine and 3g chicken powder and steam for 30 minutes until the fins are soft and glutinous.

(2) Chop the chicken breast and add 650g chicken broth. Beat it into a paste with a grinder. Sieve to remove the residue. Add 2 egg whites, 5g refined salt, 1g MSG, 1g chicken powder, 50g cornstarch, and 20g cooking wine. Mix well and set aside.

(3) Heat 75g of salad oil in a pan, add the minced chicken paste and stir-fry until it becomes fine sand. Add the shark fin and stir-fry briefly. Pour into a bowl and sprinkle with chopped ham.

When adding cornstarch to chicken porridge, pay attention to the amount. Too much will make it a paste, and too little will make it snowflake-like.

The pan for frying chicken porridge should be thick and clean.
