Also known as Niucai, Dalizi, Batthorn, Oriental Radish, Oriental Ginseng, Bullwhip Vegetable, etc., it is a taproot herbaceous plant of the Asteraceae family. It is a vegetable with a large fleshy root for consumption, and its petioles and young leaves are also edible. It is native to my country and was introduced to Japan around 920 AD.

Burdock has long been used as medicine in my country. Ancient medical literature such as "Compendium of Materia Medica", "Famous Doctors' Records", "Yao Xing Lun", "Xinxiu Bencao", "Supplement to Bencao", "Classification of Herbal Medicine", and "Chinese Medicinal Diet Collection" all have detailed records of the medicinal value of burdock. Burdock seeds can be used as a Chinese medicine for detoxification, diuresis, edema, sore throat, pneumonia, scarlet fever, epidemic parotitis, and colds; stewing burdock roots with large intestine can prevent hemorrhoids, and mashing juice can prevent irritability. There are many ways to eat burdock. Before eating, peel off the outer skin of the root, soak it in water, and cut it into strips or slices. Boil it in boiling water. After it is softened, the burdock is cool and refreshing with a special flavor. It can be mixed with cold dishes, stir-fried with meat, or made into candied silk or soup.
