Ingredients: rice, winter melon, lean meat, soaked mushrooms and black fungus;

Seasoning: salt; soy sauce; minced ginger; onion; pepper; MSG; cornstarch; sesame oil;

Method: 1. Wash and slice the lean meat, add salt, soy sauce, minced ginger, pepper, MSG, and cornstarch in turn and set aside. Because the weather is hot, the marinated meat slices should be kept in the refrigerator to keep fresh.

2. Wash the winter melon, peel it and cut it into pieces; wash and chop the mushrooms and fungus for later use;

3. Wash the rice, add water according to the usual proportion of porridge, boil it, turn down the heat and simmer slowly; when the rice blooms, add winter melon cubes and mushrooms and continue to simmer until the rice porridge is thick, then add fungus and salt to taste. Note: Salt has the effect of separating colloids, so try not to stir too much after adding salt, and stir in one direction, otherwise the thick rice porridge will become thinner.

4. Quickly dip the meat slices one by one into the seasoned rice porridge (be careful not to stir!), then add sesame oil, sprinkle with chopped green onions, turn off the heat, cover the pot and simmer for five minutes.

Tips

1. After the fungus is soaked in cold water, drain the water, add a little salt and rub it gently for a while, then rinse it with water to remove the sand in the fungus; the mushrooms can also be cleaned quickly in the same way!

2. When cooking meat porridge, the key point is to marinate the meat in advance. The temperature of the porridge itself can completely cook the meat. Some people like to fry the meat in advance. In my opinion, the fumes of fried meat are strong, which conflicts with the light taste of meat porridge, so it is not recommended.

3. After washing the rice, you can soak it for half an hour, drain the water and then cook it. After the water boils, you can put the winter melon in. This can save energy and is more environmentally friendly.
