Xinjiang is a vast area. The Tianshan Mountains are the most important part of the region and also the place with the largest mushroom production. There are many different types of wild mushrooms in Xinjiang, and it is difficult for me to introduce them all at once. Today, I will focus on some of the special types of wild mushrooms in Xinjiang that are edible for humans.

1. Xinjiang Deer Antler Mushroom

Deer antler mushroom is very famous in Xinjiang. It is also called deer seedling or deer head mushroom. It is a wild mushroom that can be eaten by humans. Its fruiting body is relatively large, and the cap becomes flat in the later stage. The appearance is light gray and has slightly larger scales. This mushroom has high nutritional value and can play a significant nourishing role after people eat it.

2. Xinjiang Morel

Xinjiang Morel is also the most common wild mushroom in Xinjiang. Local people also call it sheep's tripe. Its fruiting body is not large, mostly between six and fifteen centimeters. The cap is irregular. Its appearance is very similar to sheep's tripe, light yellow-brown, and the stipe is mostly white. It likes to grow in broad-leaved forests or some mountain roadsides. The amino acid content in Xinjiang Morel is particularly high, which has many benefits to the human body.

3. Xinjiang white mushroom

Xinjiang white mushroom is also called big crisp. This mushroom has a relatively crisp texture and a large fruiting body. When collected, it is mostly beige or eggshell-like in color. It has no hair or mucus on the surface. The flesh is mostly white. It has a light numb or spicy taste when eaten. This white mushroom has excellent anti-cancer effects. It mostly grows near fir, pine and hemlock. It is the most famous local specialty in Xinjiang.
