How to make minced fish porridge
I believe many of my friends are familiar with the method of making fish porridge. Let’s learn it together.

Minced fish porridge

Fish porridge ingredients

Ingredients: 600g grass carp, 100g pork liver, 100g rice

Accessories: 50g dried scallops, 15g dried dates, 50g yuba, 5g baking soda

Seasoning: 30g green onion, 10g ginger, 5g salt, 5g orange peel, 20g soy sauce, 30g starch (corn), 5g ginger juice, 30g lard (refined)

Features: Strong meat flavor.

How to make minced fish porridge

: 1. Peel the fish, wash and dry, and cut into thin slices;

2. Cut the liver into thin slices;

3. Mix 2g baking soda and 15g water for the pork slices and soak for 2 hours;

4. Wash off the smell of baking soda, wipe dry, add ginger wine and cornstarch, and marinate for about 2 minutes;

5. Soak the scallops until soft and tear into thin strips;

6. Wash the grass carp, dry it in a clean pot until fragrant, put it into a cloth bag together with the peel, ginger, onion and red dates, and tie the bag tightly;

7. Add 3 grams of baking soda and 250 grams of boiling water to the yuba and soak for about 20 minutes. Wash off the baking soda smell with clean water and drain the water.

8. Wash the rice;

9. Add about 2.5 liters of water to the pot and bring to a boil. Add rice, scallops, bean curd sticks and the cloth bag, and cook over low heat for about 2 hours.

10. After the porridge is cooked, add appropriate amount of salt, put in the pork liver slices, and blanch until cooked;

11. Put the fish slices, cooking oil and a little soy sauce in a bowl, then add the boiling porridge, shredded ginger and shredded green onion.

Tips - Food incompatibility:

Pork liver: Pork liver should not be eaten with fish, sparrow meat, buckwheat, cauliflower, soybeans, tofu, quail meat, and pheasant; it should not be eaten with foods rich in vitamin C such as bean sprouts, tomatoes, peppers, edamame, and hawthorn; animal liver should not be eaten with vitamin C, anticoagulants, levodopa, paroxysmal, and phenelzine.

Rice: Tang Dynasty Meng Shen: "Japonica rice cannot be eaten with horse meat, as it will cause tumors. It cannot be eaten with Xanthium sibiricum, as it will cause sudden heart pain."

Wang Yuying of the Qing Dynasty: "Although fried rice is fragrant, it is dry and helps to stimulate fire. People who are not suffering from cold and diarrhea should avoid it."
