The Chinese date is a wild fruit with a particularly high vitamin C content. It is mainly produced in the Changbai Mountain forest area in northeast China. It can be used directly after it matures in large quantities around September every year, or it can be brewed into fruit wine for people to drink. This is not only conducive to the absorption and utilization of the nutrients in the Chinese date, but also can extend the shelf life of the Chinese date in disguise.

1. When making round jujube wine, you must choose those healthy dates with a maturity of more than 80%. The jujubes that are rotten or worm-eaten are not suitable for making fruit wine. In addition, you must prepare a large clean glass bottle and an appropriate amount of rock sugar.

2. Sterilize the clean glass bottle with high temperature and dry the water inside, then wash all the round dates with clean water and put them in a ventilated place to dry. After it is dry, use an oil-free and water-free knife to remove its peel, and then put it on a clean panel and cut it into pieces.

3. The ratio of round dates to rock sugar should be 10:3. After preparation, put the cut round dates into the prepared large clean glass bottle, put a layer of round dates and a layer of rock sugar. Fill the glass bottle about 80% full. Put an appropriate amount of rock sugar on the top layer and then seal the cap of the glass bottle.

4. Put the sealed glass bottle in a cool and ventilated place to let it ferment. During the fermentation period, shake the glass bottle by hand every day to allow the round date pulp and rock sugar inside to fully contact. After about a week, you can see a lot of bubbles coming out of the glass bottle, which means that the original date pulp has begun to ferment.

5. After 20 days, the round jujubes that have been evaluated are basically fermented. After taking them out, filter them with clean gauze, and put the obtained Yuan jujube wine back into a clean glass bottle for secondary fermentation. It will take about 30 days for the real round jujube wine to be ready. At this time, you will smell the rich aroma of wine after opening the bottle cap.

6. After being cured, the Yuan Zaozi wine has no lumps and no bubbles. It tastes sweet and sour and refreshing, and the alcohol content is not high. Most people can drink it, but if you cannot finish it at one time, you must keep it sealed, otherwise the Yuan Zaozi wine will easily deteriorate.
