1. Wash all ingredients. Heat a little oil in a pan over low heat, add cashews and fry until both sides are golden and crispy. Turn off the heat and set aside.

2. Place a towel under the fish (to prevent it from slipping), slice off half of the fish with a sharp knife along the tail close to the bones (this is the time to test your knife skills, be slow), carefully remove the bones from the fish and cut the fish into strips;

3. Cut the fish into 1 cm dices, put them into a large bowl, add a little salt, chicken essence, pepper, cooking wine, and cornstarch (if it is a little sticky, the thickness of the cornstarch is just right), marinate for 10 minutes, add a little oil and mix well before frying;

4. Slightly trim the appearance of the dragon fruit, cut it in half, use a spoon to carefully scoop out as much flesh as possible, and cut it into fish-sized dices; keep the shell as a container;

5. Dice carrots and celery into the same size. Bring water to a boil in a pot. Add two drops of oil, then put carrots and celery in. Boil the water, remove from the water, rinse with cold water, drain and set aside.

6. Heat more oil in the pan, pour in the marinated fish cubes and stir-fry until the color turns white, then turn off the heat and stir-fry with the remaining heat until 80% cooked and set aside; heat the remaining base oil and pour in the carrot and celery cubes and stir-fry;

7. After stir-frying for a few times, pour in the fried fish cubes and dragon fruit and stir-fry carefully again. Add salt and chicken essence and mix well. Then pour in wet starch water to thicken to the appropriate viscosity. Finally, pour in the fried cashews before serving, mix well, and serve in the dragon fruit container.
