How to make French shortbread crust

Whip the softened butter until there are no lumps.

Add sifted powdered sugar and mix well.

Add room temperature eggs in 2 batches and mix until fully mixed.

Scrape the edges of the flour bowl clean and let the cream paste concentrate at the bottom of the bowl.

Add sifted flour and almond powder, cut, press and mix.

When the dough comes together, put it into a plastic bag and refrigerate for about 3 hours.

After rolling the dough into a round flat shape, sprinkle it with high-gluten flour to prevent sticking, and then roll it flat with a rolling pin.

Roll it out to about 3-5mm thick, slightly larger than the tower plate.

After placing it on the tart plate, gently adjust the surrounding area of the tart crust to make it look loose.

Use a rolling pin to roll off the excess pie crust.

Use your thumb and index finger to press the crust to fit the bottom and sides of the pan.

Poke holes in the bottom with a fork to prevent it from puffing up.

Place baking paper on the pie crust and place soybeans on it. (Dried soybeans, red beans, barley, etc. can all be used as beans for baking.)

Preheat the oven to 170 degrees, put the tart crust into the oven and bake for about 15 minutes, remove the baking paper and soybeans, and bake for another 10 minutes. (This tart crust can also be used as a biscuit base for cheesecake).
