Step 3: Add oil to the pot, heat it up and then add onion, ginger, cinnamon, bay leaves and star anise.

Step 4: Add oil, winter melon and salt, cover the pot and simmer for 20 minutes.

Step 5: Stew until the winter melon is soft and the soup is slightly reduced and then you can serve.
