1. How to cook silver carp - Braised silver carp with tofu

Step 1: Clean the silver carp and cut it into pieces. Marinate the silver carp pieces with cooking wine and pepper.

Step 2: Chop garlic into pieces, slice ginger, tie green onions into knots, and chop tofu into pieces.

Step 3: Put the tofu cubes into the pot and cut the garlic sprouts into sections.

Step 4: Add some starch to the marinated silver carp pieces , stir to coat them, then add some oil and mix well.

Step 5: Add some oil to the pan and fry the fish pieces.

Step 6: Leave some oil in the pot, sauté the scallion, ginger and garlic, then add the fish pieces and the broth.

Step 7: Add two spoons of hot sauce, light soy sauce, oyster sauce, dark soy sauce and salt to season.

Step 8: Add tofu cubes and simmer over low heat, then add garlic sprouts and cook for eight minutes.

2. How to cook silver carp - boiled silver carp

Step 1: Clean the silver carp , remove the bones and cut into thin slices, then marinate with egg white, starch and salt.

Step 2: Wash the bean sprouts and cut them into sections. Boil the bean sprouts and green vegetables and set aside.

Step 3: Add oil to the pan, add dried chilies, star anise, bay leaves and bean paste and stir-fry until fragrant.

Step 4: After frying until fragrant, add boiling water, blanch the silver carp fillets and bring to a boil.

Step 5: Add bean sprouts and green vegetables into the pot, bring to a boil, then remove from the pot and place into a bowl.

Step 6: Heat up another pot of oil and quickly pour it over the fish fillets and bean sprouts and vegetables.
