When making Wujiang fish at home, you need to prepare a silver carp, about one kilogram, 500 grams of southern tofu, 50 grams of bean paste, 10 grams of salt, 2 grams of MSG, appropriate amounts of MSG, five-spice powder, pepper and red pepper, and also some lard, ginger and green onions.

Specific steps for making Wujiang fish

1. Remove the scales and internal organs of the prepared fish, then wash it with clean water. Finally, use a knife to make cuts on both sides of the fish and set aside.

2. Cut the tofu into pieces of your favorite shape, then blanch it in boiling water for three minutes, remove it from the water and set aside. Cut the onions, garlic and ginger into slices.

3. Heat the wok and add lard. When it is 60% hot, add the chili and bean paste and stir-fry until fragrant. Then add ginger, garlic, soup base, five-spice powder, pepper powder and other seasonings into the wok and mix well. If there is no soup base, you can use water instead.

4. Put the fish and tofu into the pot together, cook for about ten minutes, add salt, and finally add chopped green onion and MSG to enhance the flavor. Remove from the pot and serve on a plate.
