Introduction

Porphyra is a general term for marine algae that grow alternately in the sea. It belongs to the Rhodophyceae family and the Rhodophyceae class. The algae are membranous and are called thalluses. They are purple or brown-green in color. The shape varies with the species. Porphyra is a marine red algae. The thallus is composed of a layer of cells embedded in a thin layer of colloid and is dark brown, red or purple. Porphyra has a disc-shaped holdfast and filamentous rhizomes. It grows on rocks in shallow intertidal zones. There are many species, mainly Porphyra yezoensis, Porphyra haitanensis, and Porphyra gansuensis. Artificial cultivation has been carried out in coastal areas of China. In the early 21st century, China's Porphyra production ranked first in the world. It is rich in protein, iodine, phosphorus, calcium, etc. It can be used for food and medicine [20]. Porphyra can also be used as medicine to make traditional Chinese medicine, which has the effects of resolving phlegm and softening hard masses, clearing away heat and promoting diuresis, and nourishing the kidney and heart. Porphyra is often mistaken for a plant because it can photosynthesize; however, biologists generally believe that it is not a true plant because it does not have true vascular tissue (xylem and phloem), unlike seagrass. In addition, several cyanobacteria are related to nori. Large nori grows mostly in cold regions. Artificially cultivated species include Porphyra yezoensis and Porphyra haitanensis.

Nutritional value of seaweed

The edible leaf-shaped algae of the genus Porphyra. Porphyra is rich in nutrition, with a higher protein content than kelp, and contains more carotene and riboflavin. Every 100g of dry Porphyra contains 24-28g of protein, 0.9g of fat, 31-50g of carbohydrates, 330mg of calcium, 440mg of phosphorus, 32mg of iron, 1.23mg of carotene, 2.07mg of riboflavin, 5.1mg of niacin, 3.4g of alanine, 3.2g of glutamic acid, 2.4g of glycine, 2.6g of leucine, and 1.4g of isoleucine. Its content of protein, iron, phosphorus, calcium, riboflavin, and carotene ranks first among all vegetables, so Porphyra is also known as a "treasure house of nutrition".
(1) Protein and amino acids The active substances in laver are very important for plant life activities. Edible laver generally has a protein content of 24%-28%, which is much higher than that of ordinary vegetables, and contains a lot of amino acids necessary for the human body. The amino acids that make up laver protein, such as alanine, aspartic acid, glutamic acid, glycine, proline, etc., are more neutral and acidic amino acids, which is a feature that all terrestrial vegetables do not have.
(2) Fat Compared with terrestrial plants, laver has a lower fat content, mostly below 1%. Among the fat in laver, palmitic acid, a saturated fatty acid, accounts for the majority, about 20%; myricic acid and stearic acid are less, accounting for 2% each; unsaturated fats that have a good health effect on the human body, such as linoleic acid, linolenic acid or octadecatetraenoic acid, are more abundant, ranging from 10% to 30%, and highly unsaturated fatty acids above C20 also have a certain content. Even better, the content of eicosapentaenoic acid, which is likened to "brain gold", in laver is as high as 30%.
(3) Vitamins Nori contains a variety of vitamins, and the content of B vitamins is comparable to that of vegetables. Nori contains a high content of B vitamins, especially vitamin B12, which is almost non-existent in terrestrial plants. In terms of dry matter, the content of vitamin B12 is similar to that of fish. The content of vitamin C is also high. Vitamin B12 can activate brain nerves, prevent aging and memory loss, and improve depression.
(4) Inorganic matter: Since seawater contains extremely rich inorganic components, and laver has the function of absorbing and accumulating inorganic matter in seawater, the content of inorganic matter in laver is extremely rich.

The efficacy and function of laver

Laver is rich in protein, polysaccharides, various amino acids, fats, vitamins, inorganic salts and other substances. Laver is rich in nutrition. Its protein content exceeds that of kelp, and it contains more carotene and riboflavin. Laver can resist radiation, mutation and oxidation, which is related to its selenium content. Side effects and contraindications of eating seaweed

"Bencao Shiyi" said: "Eating too much will cause abdominal pain, gas, and spitting of white foam, which can be relieved by drinking a little hot vinegar." Therefore, this product is not for long-term use.

Preparation of seaweed:
Seaweed Soup

1. Cut the round seaweed into pieces with scissors. Add 2-3 spoons of fresh soy sauce (or light soy sauce) to 100g of seaweed. Knead it with your hands to let the flavor of the soy sauce penetrate into the seaweed.
2. Cool the pot, add appropriate amount of cooked sesame seeds, and then turn to low heat.
