1. Ingredients for Mao's Braised Pork

The main ingredients are pork belly and eggs, with an appropriate amount of Chinese cabbage. The seasonings you need to prepare are salad oil, salt, onion, ginger, star anise and cinnamon, cooking wine, soy sauce, and of course, dried chili peppers, which are indispensable for Hunan cuisine.

2. How to make Mao's braised pork

Step 1: After cutting the pork belly into pieces, boil the eggs, peel them, and soak them in cold water for later use.

Step 2: Put the pork belly into a pot of cold water, add ginger and scallion, bring to a boil over high heat then turn to low heat and continue cooking, slowly filtering out the foam on the pork belly.

Step 3: Drain the pork belly and rinse it in cold water. Drain and set aside.

Step 4: First, stir-fry the pork belly in a pan, and then take it out when the surface of the pork belly turns golden brown.

Step 5: Put some sugar in the pot and slowly dissolve the sugar with a spoon. After the sugar is fried in oil, add the pork belly and stir-fry.

Step 6: After the pork belly is covered with sugar color, add cooking wine and soy sauce, and stir-fry repeatedly until evenly mixed.

Step 7: Add a bowl of water to the pot, just enough to cover the pork belly, add ginger, onion, star anise, and dried chili peppers, and simmer for another hour on low heat after the water boils. Remove from the pot when the sauce is absorbed.
