How to make dried chili sauce

Have you ever eaten dried chili sauce? It's very delicious. Here's how to make it:

Dried chili sauce method:

1. Heat vegetable oil in a clean pot, add chopped shallots and chili peppers and stir-fry until fragrant;

2. Then add shrimp paste and fry slowly over low heat. When the shrimp paste releases oil, it is ready to serve.

1. Shrimp paste is also known as shrimp cake. It is a kind of viscous paste made by grinding various small fresh shrimps after adding salt and fermentation. It can be produced in all coastal areas of my country where small shrimps are produced. The largest production is in Tangshan, Hebei, Huimin, Yangjiaogou, Shandong, Zhejiang and Guangdong. The production and processing period is from May to October every year. The shrimp paste processed in Tangshan and Cangzhou, Hebei is of higher quality and is generally used as seasoning.

2. The shape of shrimp paste is slightly similar to sweet paste, and it is divided into first, second and third grades. It is bright red and yellow, fine in texture, pure and fragrant, with sufficient salt, less water content, and has the unique freshness of shrimp. It is better if it is free of insects and odor. Tangshan and Cangzhou products have the best quality. Some are mixed with small crabs and clams during processing, which affects the quality. The color is mostly grayish yellow and not bright.

3. Shrimp paste is generally used as a seasoning. It is most delicious when added to various fresh vegetables and meat. Adding a little shrimp paste to noodle soup will give it a special flavor. It can also be eaten raw or steamed as a dish.

4. It is advisable to store in a jar or a wooden barrel. It must be tightly sealed to prevent rain and water. Store in a cool and ventilated place. After opening the jar to take out the goods and selling them, they must be covered in time to prevent flies from biting, contamination, maggots, insects, mold and deterioration. If it is found that there is bubbling but it has not deteriorated, add a little white wine in time and seal it for storage. If it has bubbled, deteriorated and has a bad smell, it cannot be eaten. Some areas like to eat raw food, so pay more attention to preventing contamination.
