[Ingredients] 350 grams of cowpea, 1 gram of Sichuan pepper, 2 grams of dried chili, 10 grams of ginger, 15 grams of onion, 25 grams of garlic, 30 grams of chopped pepper, 3 grams of sugar, 2 grams of salt, 20 milliliters of soy sauce, 15 milliliters of vinegar, 5 milliliters of sesame oil, 1 gram of beef powder, 30 milliliters of cooking oil, and 10 milliliters of rice wine.

1. Fish-flavored sauce: mix minced ginger, minced garlic, minced green onion, chopped pepper, sugar, soy sauce, vinegar, sesame oil and beef powder.

3. Cut the cowpea into inch-long pieces.

4. Put the cowpeas into the pot and blanch them until cooked.

5. After taking it out, put it in cold water, cool it down and drain it.

6. Heat the pan and add cold oil. When the oil is hot, add peppercorns and dried chilies, stir-fry until fragrant and then remove from the pan.

7. Add cowpea and rice wine and stir-fry until 80% to 90% cooked.

8. Pour in the fish-flavored sauce and stir-fry over medium heat until it is well-flavored. Add salt according to taste.

1. Wash and clean the cowpeas and cut them into pieces about 5 cm long.

2. Chop the garlic and onion, and cut the dried chili into small pieces for later use.

3. Boil water in a pot, add a little salt and cooking oil (so that the color is brighter), put in the cowpeas and blanch for 3 minutes, remove and immediately soak in clean water to cool.

4. Take out the cowpeas, cut them into sections, season them with salt and MSG, and place them on a plate. Add chopped green onions, minced garlic, and chili peppers in turn. Pour boiling oil into the plate, and finally sprinkle with cooked white sesame seeds. (The oil must be hot to sauté the green onions, garlic, and chili peppers.)

[Ingredients] 500 grams of pork belly, 80 grams of dried cowpea, 4 pieces of star anise, one scallion, a piece of ginger, 15 grams of rock sugar, 10 ml of light soy sauce, 10 ml of dark soy sauce, and appropriate amount of salt.

1. Cut the pork belly into small pieces, blanch it in boiling water for 2 minutes, remove it, rinse it with water to remove the foam, and drain the water;

2. Soak the dried cowpeas in warm water for 2 hours. After softening, rinse with water and cut into small pieces (any length is optional);

3. Heat the pan over low heat without adding oil, put the blanched pork belly into the pan and stir-fry until the meat changes color and the oil is fried out;

4. Pour away the oil and serve the pork belly;

5. Pour a little oil into the pot and heat it on low heat. Add rock sugar and stir-fry until it melts and turns brown, i.e. caramel color.

6. Pour in the fried meat and stir-fry until the meat is colored;

7. Pour enough boiling water, light soy sauce, dark soy sauce, scallion segments, and ginger slices, bring to a boil over high heat, then simmer over low heat for about 1 hour;

8. After 1 hour, add the green beans, stir-fry evenly, and continue to simmer for about 20 minutes. Stir-fry a few times in the middle to allow the beans to be evenly flavored. Add appropriate amount of salt according to taste.
