What are the ingredients of kidney beans? Will eating kidney beans cause poisoning?

How can we avoid kidney bean poisoning when eating kidney beans? Today, I will tell you how to prevent kidney bean poisoning:

Kidney Bean Introduction

Kidney beans, also known as kidney beans, are a delicacy that people love to eat. However, poisoning accidents caused by eating undercooked kidney beans occur from time to time, so we should be vigilant. Most of the poisonings occurred in canteens where "big pot dishes" were eaten. The main reason was that the heating time was short and the toxic substances were not completely destroyed.

Ingredients of Kidney Beans

Kidney beans contain substances that are harmful to the human body, such as betaine, saponin, nitrite, and trypsin. There are two main types of toxic substances, one is betaine, a plant toxin protein that has a coagulation effect; the other is saponin (or saponin), which is highly irritating to the mucous membrane and contains hemolysin that destroys red blood cells. Kidney beans contain more toxins in cold climates. If they are left for 24 hours or longer, the nitrite content will also increase, which is one of the causes of poisoning. When kidney beans are not cooked thoroughly, some of the undamaged toxins enter the gastrointestinal tract and cause a series of poisoning symptoms. The symptoms of poisoning mostly appear 1 to 5 hours after eating kidney beans. Its toxicity can strongly stimulate the gastrointestinal tract, causing nausea, vomiting, abdominal pain, diarrhea, etc. In severe cases, dizziness, chest tightness, palpitations, chills, fever, fatigue, etc. may also occur. When symptoms of poisoning appear after eating kidney beans, go to the hospital immediately for treatment such as vomiting, gastric lavage, catharsis, and infusion.

Ways to prevent kidney bean poisoning are:

When cooking kidney beans, they should be fully heated and cooked thoroughly before eating, because the kidney bean toxins will be destroyed at a temperature of 100°C. When eating cold kidney beans, they must be boiled for more than 10 minutes. Do not blindly pursue color, freshness, and crispness while ignoring its adverse reactions. Do not eat half-cooked kidney beans.
