How to make baked pumpkin with egg yolk

Here’s how to make pumpkin baked with egg yolk:

Ingredients for baked pumpkin with egg yolk:

500 grams of pumpkin, 2 salted eggs (egg yolks).

Egg yolk baked pumpkin seasoning:

1.5 teaspoons of salt, 100 grams of starch, 1 tablespoon of sugar.

How to make baked pumpkin with egg yolk:

1. Wash and peel the pumpkin, remove the melon pulp in the center, and then cut into 1 cm wide and 4 cm long segments.

2. Add 1 teaspoon of salt to the cut pumpkin segments and mix well. Marinate for 20 minutes to allow the pumpkin to release water.

3. Take out the yolks of the salted duck eggs and crush them with a small spoon for later use.

4. The pickled pumpkin segments will release water. After draining the water, add dry starch and mix thoroughly so that each piece is coated with starch.

5. Put oil in the pot. When it is 50% hot, put in the pumpkin strips and fry them on low heat until the color turns light yellow and becomes hard. Then drain the oil and remove from the pot.

6. Use another pot, leave a little oil in the pot, add the crushed salted egg yolks, and stir-fry over low heat.

7. When the salted egg yolks are fried with bubbles, add the fried pumpkin strips, add 1/2 teaspoon of salt and sugar, stir well and serve.

Tips

1. Cook the pumpkin until it is soft. If it is overcooked, it will look ugly.

2. If the egg yolk is too dry when fried, add a small amount of water.

3. When restaurants make this dish, they usually fry the pumpkin first. This is because egg yolks contain high cholesterol, so the pumpkin is only boiled. The fried pumpkin is more fragrant.
