My favorite dish is egg yolk pumpkin. My mother often makes it for me. Now I can make it myself at home. Let me tell you how to make it.

Egg yolk pumpkin method:

1. Peel the pumpkin first.

2. Cut the pumpkin, remove the seeds, and then cut into even-sized strips.

3. Peel and remove the salted duck eggs. Crush the egg yolk with a knife. Half a pound of pumpkin strips requires 3-4 large salted egg yolks. (When choosing salted duck eggs, it is best to ask the merchant to open them. If you can buy free-range duck eggs in the countryside, the best ones have fragrant yolks and more oil)

4. Duck egg yolks have a high cholesterol content, so don’t eat too much!

5. Boil water and blanch the pumpkin. Don't cook it for too long. (If you have no experience, I suggest you taste it and make sure it's not too hard.)

6. Add oil to the pan, add the crushed duck egg yolks when it is warm. (Be sure to use low heat). Stir-fry until the egg yolks are bubbling, then add a little water, not too much! (Adding water is because the egg yolks will be drier after bubbling, so they are a little thinner)

7. The egg yolk is already salty, so add a little salt and a little chicken powder. Add the blanched pumpkin and stir-fry evenly. The egg yolk will stick to the pumpkin like foam.

Casserole Tofu

Ingredients: 350g soft tofu, 50g pork slices, 4g Totole chicken stock, 12g soaked mushrooms

1. Cut the tofu into long strips, boil it in boiling water and then take it out.

2. Heat the oil in a pan, add the scallion and ginger, stir-fry, then add the meat slices, bamboo shoots and mushrooms and stir-fry until cooked; add wine, water and salt, pour into the casserole after boiling, and add the dried shrimps.

3. Put the casserole on the fire and simmer over low heat for an hour. Sprinkle with Maggi chicken essence and sesame oil, and simmer for a while.
