1. Scallion Oil Straw Mushroom

[Ingredients] Fresh straw mushrooms, salt, sugar, soy sauce, oyster sauce, pepper, sesame oil, aniseed, onions, ginger, pine nuts, fresh edamame, gluten, winter bamboo shoots, and carrots.

1. Cut fresh straw mushrooms, gluten, winter bamboo shoots and carrots, blanch edamame in boiling water and set aside, fry scallions and ginger in oil until fragrant and pour into a small bowl;

2. Heat the wok and pour in the oil. Add the aniseed and stir-fry until fragrant. Then add the mushrooms, gluten, winter bamboo shoots, and carrots. Season with soy sauce, oyster sauce, pepper, sugar, and salt. Simmer for a while until the soup is dry. Add the carrots and edamame and stir-fry for a while. After turning off the heat, pour the fried onions and ginger oil on top. After serving, sprinkle with pine nuts. [Features] Smooth texture, strong fresh flavor, and pine flavor.

2. Mushroom and Pork Slices

Ingredients: Pork (3-4 taels), straw mushrooms (15), green onion (1), ginger (3 slices), garlic (4 cloves)

Seasoning: Oil (3 tablespoons oil), Salt (1/3 tablespoon), Sugar (1/5 tablespoon), Cooking Wine (1/3 tablespoon), Soy Sauce (1/2 tablespoon)

Marinade: soy sauce (1/3 tbsp), chicken stock (1/4 tbsp), cornstarch (1 tbsp)

1. Wash and slice the pork, add 1/3 tablespoon of soy sauce, 1/4 tablespoon of chicken essence and 1 tablespoon of cornstarch and marinate for a while.

2. Wash the straw mushrooms and cut into slices, wash the green onions and cut into chopped green onions, flatten and peel the garlic, peel and slice the ginger.

3. Boil half a pot of water, put the straw mushrooms in and blanch them for 1 minute, then remove them and drain the water.

4. Pour 3 tablespoons of oil into the pot and heat it up. Add ginger and garlic and stir-fry until fragrant. Pour in the marinated meat slices and stir-fry until the meat turns white. Pour 1/3 tablespoon of cooking wine and stir well before removing from the pot.

5. Add garlic into the pan and heat it. Pour in the straw mushrooms and stir-fry for 1 minute. Then pour 1/2 tablespoon of soy sauce on the straw mushrooms and stir-fry for a few times.

6. Pour the meat slices into the pot, add 2 tablespoons of water, 1/3 tablespoon of salt and 1/5 tablespoon of sugar, stir well, and serve after 2 minutes.

Kitchen Tips

1. Before stir-frying straw mushrooms, blanch them in boiling water for a while, remove them from the water and drain them before stir-frying. Straw mushrooms that are not blanched will have a strange smell.

2. Wash and scrape off the bottom of the straw mushroom of appropriate size, make a cross cut on its head, wash and blanch it, then you can stir-fry or stew it. If the straw mushroom is too big, it will be difficult to stir-fry it, and it will not taste good, so it is better to slice it.

3. Straw mushrooms have a delicious flavor. When steamed with meat, the straw mushrooms will blend with the meat flavor and taste extremely delicious.

3. Stir-fried pork with straw mushrooms

(Ingredients) 120 grams of fresh straw mushrooms, 100 grams each of lean pork and tender loofah, appropriate amounts of clear soup, cooked vegetable oil, ginger, refined salt, and wet starch.

(Preparation) Remove the stems of fresh straw mushrooms, wash them, drain the water, blanch them in boiling water, drain the water, and cut them into strips; wash the lean pork, cut them into shreds, and mix them with wet starch; peel the tender loofah, wash it, and cut it into thin shreds; wash the ginger, peel it, and cut it into thin shreds. Heat the soup pot over high heat, pour in clear soup and bring it to a boil, add the shredded straw mushrooms, shredded loofah, shredded ginger, and refined salt, bring it to a boil, add the shredded lean pork, and after it boils again, pour in the cooked vegetable oil, and serve it in a soup bowl.

4. Straw Mushroom and Bamboo Shoot Buns

(Ingredients) 250 grams of fresh straw mushrooms, 200 grams of winter bamboo shoots, 150 grams of lean pork, 500 grams of flour, and appropriate amounts of chopped green onion, chopped ginger, refined salt, soy sauce, MSG, sesame oil, flour, and alkaline water.

(Preparation method) Wash fresh straw mushrooms, remove the stems, blanch in boiling water, cool with cold water, drain, and cut into small dices; wash lean pork and winter bamboo shoots, cut into small dices; put the dough into a basin, add warm water to make dough soup, add flour and knead until soft and smooth, cover with a wet white cloth, wait for the dough to ferment, add alkaline water, then roll the dough into strips, pinch into several dough pieces, roll into round skins, put the straw mushrooms, winter bamboo shoots, lean pork, chopped green onions, and ginger into a basin, add MSG, refined salt, soy sauce, sesame oil, stir well to make the stuffing for buns. Put the stuffing into the bun skin, make the buns, and steam them in a steamer.
