Steps for making pickled garlic

1. Process the prepared fresh garlic, peel off its roots and stems with a knife, then remove the old skin on the outside of the garlic, leaving only 1 to 2 layers of tender skin inside. Soak the processed garlic in clean water with a small amount of table salt for two to three days, changing the water several times in between.

2. Take out the soaked garlic, drain the water, and put it directly into a clean glass bottle. Then add sugar and rice vinegar directly, mix well with chopsticks, seal the mouth of the glass bottle, and marinate in a cool place. After about ten days, the garlic will be flavored, crispy and tender, and taste sweet and sour, which is especially delicious.

3. If you are worried that the sugar garlic will go bad during the pickling process, you can also put the rice vinegar and sugar directly into the pot and heat them to a boil, let them cool down and then use them to pickle the sugar garlic. In this way, the chance of the sugar garlic going bad during the pickling process will be significantly reduced.

4. There are not too many restrictions on the materials for pickling sugar garlic. If there is no white sugar at home, you can use brown sugar instead. If there is no rice at home, you can use white vinegar instead. The pickled sugar garlic will taste just as good.
