Fried cowpea [recipe]

1. Remove the old stems of cowpeas and cut them into small sections. Cut the chili peppers into sections. After boiling water, pour in the cowpea sections and chili sections, add a little corn oil and salt and blanch for about 3-4 minutes;

2. Chop ginger and garlic into fine pieces, add appropriate amount of sugar, soy sauce, and balsamic vinegar, heat 1 tablespoon of sesame oil and pour it into the bowl to make seasoning;

3. Take out the blanched cowpeas, soak them in ice water until they are cool, then take them out and drain thoroughly;

4. Mix the seasoning, cowpea and chili.

1. It is better to choose cowpeas that are solid when pinched. Those that are white in color and empty are too old and not crispy, and are not suitable for cold salad.

2. When blanching the cowpeas, add a little cooking oil and salt, and soak them in ice water after blanching to keep the cowpeas in a nice green color.

3. The flavor of the seasoning can be adjusted freely, but sesame oil must be used and must be heated to remove the unharmonious taste of garlic.

4. When making any cold dishes, the water must be fully drained, and it is best to mix and eat immediately, and do not leave it overnight.
