Pea beef cubes method:

1. Cut the beef into 2 cm square dices, mix with a little soy sauce, sugar, Shaoxing rice wine, cooking oil (adding oil can make the beef more tender, and can also prevent the beef coated with starch from sticking to the pan when frying), mix well and marinate for later use (when the other ingredients are cut and fried, the marinating will be almost done:));

2. Wash the peas and drain the water for later use;

3. Wash the shallots, chop the white and green parts, and cut the dried chilies into small pieces for later use;

4. Pour oil into the pan, the amount of oil should be slightly more than that for actual cooking. When it is 70% hot, put the beef into the pan, cut it into pieces, remove from the pan, filter the oil and set aside (if you like dry-fried beef, you can stir-fry it for a longer time). Leave enough oil in the pan for normal cooking, add the dried chili segments and stir-fry briefly, then add the chopped scallion and stir-fry briefly, add the peas and stir-fry on medium-high heat for about 3 minutes, then add the cut beef pieces and stir-fry together, add a small amount of water (broth is better), boil over high heat, when the water is slightly dry, add a little water starch, stir evenly, sprinkle with chopped green onion, then serve.
