So it is recommended to put the eggplant into the microwave first. After the eggplant is half cooked, the amount of oil will be reduced a lot, and the taste will be just as delicious.

The method of making meat sauce can be adjusted according to your own preferences. It can be a little heavier as a topping. In fact, it is also delicious to stir-fry the sauce with vegetables such as tofu and mushrooms. 2 long eggplants 50g minced meat

30ml spicy sauce 10g sugar

15ml olive oil 5g black pepper

10ml chili oil 2 cloves of garlic

1 green onion

Baked Eggplant with Meat Sauce

1. Put half of the chopped green onion and garlic in the oil pan and stir-fry until the aroma comes out. Then add the minced meat and stir-fry until the minced meat changes color and is cooked.

2. Heat the oil pan over low heat until it is 30% hot, add the spicy sauce and stir-fry until the oil turns red, then add the minced meat and slowly stir-fry over medium-low heat until the minced meat is fully cooked, then add the sugar and stir well, and the roasted eggplant meat sauce is ready

3. Wash the eggplant and put it in the microwave on medium heat for 1 minute until the eggplant is slightly soft, then cut a slit with a knife and brush it with olive oil.

4. Put the remaining onions and minced garlic on the eggplant and put it in the oven preheated to 170 degrees. Bake for 5-8 minutes, then take out the eggplant and put the meat sauce on it, continue to bake in the oven for 3-5 minutes, and finally sprinkle with black pepper and chili oil.
