Sweet and sour cowpea is very delicious. My mother often makes it for me. Because I work outside, my mother knows that I like to eat it and often mails it to my workplace. I am really grateful. Sweet and Sour Cowpea Ingredients

Cowpeas

Garlic

Dried chili pepper

Salad oil

Cooking wine

Straw mushroom dark soy sauce

First-class fresh soy sauce

Rice vinegar

Rock sugar

Sweet and Sour Cowpea Method/Steps

Prepare the ingredients: Wash the cowpeas, remove the heads and tails, and break them into small pieces with your hands.

Prepare the seasoning.

Add minced garlic and dried chilies in medium oil and sauté until fragrant.

Add cowpea and stir-fry.

Pour in cooking wine.

Pour in 2 spoons of straw mushroom dark soy sauce.

Pour in 2 tablespoons of fresh soy sauce.

Add 2 spoons of rice vinegar.

Add a handful of rock sugar.

Cover and cook over high heat for a few minutes.

Open the lid, stir-fry to bring up the dry cowpeas at the bottom, and then cook over medium heat.

Then cook until the juice is reduced.

Precautions

1. When cooking cowpeas, do not add water. Use seasoning instead of water.

2. The cowpea is cooked successfully only when it becomes dry.

3. It is healthier to use rock sugar instead of white sugar. Rock sugar has the effects of promoting fluid and moistening the lungs, clearing away heat and detoxifying, relieving cough and reducing phlegm, relieving sore throat and reducing turbidity. It can be used to treat loss of appetite, dry cough, asthma, dry mouth and thirst, sore throat, high blood pressure and other symptoms.

4. Eating some vinegar and garlic in summer can kill bacteria and disinfect, reduce the risk of illness, and also stimulate appetite.
