Minced meat and eggplant are delicious

1. To make minced meat and eggplant at home, you need to prepare a fresh purple eggplant, 100 grams of minced pork, some cooking oil and bean paste, and some light soy sauce, dark soy sauce and cooking wine.

2. Wash the eggplant and cut it into pieces. Add cooking wine and light soy sauce to the minced pork and mix well before marinating. Put cooking oil in a pot and heat it to 70% hot. Then put the minced meat into the pot and stir-fry quickly. After it changes color, take it out and set aside.

3. Leave some oil in the pot and add two spoons of bean paste, then pour in the eggplant pieces and stir-fry quickly. Cover the pot and simmer the eggplant pieces over medium heat until soft. Pour the fried minced meat on top, then add a little dark soy sauce and chicken essence and stir-fry for one minute. Finally, add chopped green onions for decoration and you can take it out and serve it directly.

Braised eggplant is delicious

1. Braised eggplant is a classic way to cook eggplant. When making it at home, you need to prepare 800 grams of eggplant, an appropriate amount of coriander, garlic, sugar, light soy sauce, cooking oil and salt.

2. Peel and chop the prepared garlic into minced garlic, put sugar in a bowl, add soy sauce, then add minced garlic, add water to make a bowl of sauce for later use. Wash the eggplant and cut it into dice, add a small amount of salt to blanch it, and remove the water.

3. Put oil in the pan and fry the eggplant pieces until both sides are golden brown. Quickly pour in a small amount of starch to thicken, stir-fry quickly, and add minced garlic and coriander to season before serving.
