Introduction to Hericium erinaceus

Hericium erinaceus is listed as one of the "Four Famous Dishes" along with bear paw, sea cucumber and shark fin. The mushroom flesh is tender, fragrant and delicious, known as "vegetarian meat", and was listed as a tribute in the Ming and Qing dynasties.

Hericium erinaceus is a fungus of the Odontaceae family. The surface of the cap has hairy fleshy thorns, about 1 to 3 cm long. Its fruiting body is round and thick, white when fresh, and turns from light yellow to light brown when dry. The base is narrow or has a short stalk, and the upper part is swollen, with a diameter of 3.5 to 10 cm. From a distance, it looks like a golden monkey head, so it is called "hericium erinaceus". It also looks like a hedgehog, so it is also known as "hedgehog mushroom" at home and abroad.

Hericium erinaceus is a precious variety of edible mushrooms. Wild Hericium erinaceus grows mostly on the dead parts of oak tree trunks and prefers low humidity. It is produced in the northeast provinces and Henan, Hebei, Tibet, Shanxi, Gansu, Shaanxi, Inner Mongolia, Sichuan, Hubei, Guangxi, Zhejiang and other provinces (autonomous regions). Among them, the forest areas such as the Greater Khingan Range in the northeast, the Tianshan Mountains and Altai Mountains in the northwest, the Hengduan Mountains in the southwest, and the Himalayas in Tibet are particularly abundant.

Hericium erinaceus is generally the size of a fist. It develops slowly under natural conditions, but can grow into a huge fungus.

The quality requirements of Hericium erinaceus: the ones with uniform size, bright yellow color, tender and thick flesh, complete spines, dryness, no insect bites, and no impurities are of good quality.

When buying Hericium erinaceus: it is white when fresh and brown or golden yellow when dried. The quality of Hericium erinaceus is good if it is intact, has complete hairs, is large, and has a golden color. Otherwise, the quality is poor.

How to make Hericium erinaceus

Pork ribs with Hericium erinaceus

(Ingredients) 250g of soaked Hericium erinaceus, 150g of pork ribs, 50g each of soaked black fungus, soaked magnolia slices, and rapeseed heart, shrimp, refined salt, MSG, eggs, vinegar, onions, ginger, dry starch, clear soup, sesame oil, and cooked lard. (Preparation) Remove the roots and stems of soaked Hericium erinaceus, cut into slices, blanch briefly in boiling water, remove, and squeeze out the water; peel the pork ribs, wash, chop into minced meat, put them in a bowl, add egg white, water, and refined salt, stir well, squeeze into balls, put them in boiling water, blanch until cooked, and remove; wash the soaked magnolia slices and rapeseed heart, cut into slices; wash the onions and ginger, and cut them into thin strips. Put the rapeseed heart in boiling water and blanch until cooked, and remove. Put the cooked lard and egg yolk liquid made with dry starch in a wok on low heat, spread into egg skin, take out, and cut into slices. Add clear soup, magnolia slices, dried shrimps, black fungus, rape heart, scallion shreds, ginger shreds, egg skin, pork dumplings, and Hericium erinaceus slices into a wok and bring to a boil. Add salt, MSG, and vinegar, skim off the foam, drizzle with sesame oil, and serve. [Effects] Suitable for anemia.

Hericium erinaceus stewed pork ribs

 

[Ingredients] 250g fresh Hericium erinaceus, 200g pork ribs. 3 shiitake mushrooms, appropriate amount of refined salt and soy sauce. (Preparation) Soak the fresh Hericium erinaceus to remove the bitterness; slice the shiitake mushrooms after soaking; wash the pork ribs and cut them into small pieces. Put the Hericium erinaceus, shiitake mushroom slices and pork ribs into the pot, add appropriate amount of water, cook over high heat for half an hour, and add refined salt and soy sauce. [Effects] Aids digestion and keeps fit.

Braised Hericium erinaceus with tendon

Ingredients: 200g of soaked Hericium erinaceus, 250g of tendon, 20g each of winter bamboo shoots, ham, and dried shrimp, and appropriate amounts of chicken oil, soy sauce, cooking wine, sugar, MSG, scallion, ginger, lard, and refined salt. (Method] Cut the soaked Hericium erinaceus into slices along the spines; cut the tendon into sections; cut the ham and winter bamboo shoots into slices; cut the scallion and ginger into bean slices. Put the Hericium erinaceus slices and tendon sections into a boiling water pot and blanch them. When the lard is added to the wok and heated to 70% hot, pour in the Hericium erinaceus slices and tendon sections and stir-fry, pour into a colander, and drain the oil. Add scallion slices, ginger slices, ham slices, winter bamboo shoots slices, dried shrimp, Hericium erinaceus slices, tendon sections, and then add cooking wine, refined salt, soy sauce, sugar, MSG, and water to the original pot. Bring to a boil, then simmer over low heat until the sauce is thick, pour in chicken oil, and serve on a plate. [Effects] Aids digestion and strengthens bones.

Braised Hericium erinaceus with winter bamboo shoots

(Ingredients) 550g Hericium erinaceus, appropriate amounts of ham slices, cooked bamboo shoot slices, cooking wine, refined salt, scallion knots, ginger slices, rapeseed heart, and cooked lard. (Preparation) Remove the roots and stalks of Hericium erinaceus and cut them into large pieces along the hair; wash the rapeseed heart and cut it into sections. Heat the cooked lard in a wok over medium heat, add ginger slices and scallion knots and fry until fragrant, add cooking wine, Hericium erinaceus slices, ham slices, cooked bamboo shoot slices, and rapeseed heart sections and bring to a boil, then simmer over low heat until the Hericium erinaceus slices are soft, then switch to medium heat, add refined salt, sprinkle with cooked lard, and pour into a large round plate. [Effects] Suitable for insomnia.
