Ingredients for pickled Guangdong sauerkraut

Main ingredient: Chinese kale. Side ingredients: salt, white vinegar, sugar, soy sauce, aniseed, chopped green onion, and chili. These ingredients can be combined according to your needs, and the amount of side ingredients varies with the amount of Chinese kale.

How to pickle Guangdong pickled cabbage

1. Remove the yellow leaves from the kale you bought, wash it with clean water and drain it, then cut the kale into four equal parts with a knife. Set it aside for later use.

2. Add water to the pot and bring it to a boil. Then add all the seasonings you have prepared and cook for three minutes to make a fragrant sauce. After turning off the heat, let the sauce cool naturally.

3. Put the processed kale into the pickled vegetable jar, then pour in the prepared sauce, and add chopped green onion and chili pepper. Shake the jar a few times with your hands to allow the vegetable and sauce to fully combine.

4. Seal the mouth of the pickled vegetable jar, and pour clean water next to the lid, store it in a cool place, and then check whether there is enough clean water next to the lid every three or four days. If not, add some to prevent air from entering the jar.

5. After about twenty days, the homemade Guangdong sauerkraut will be ready to be eaten. This kind of sauerkraut can be eaten directly or as a side dish. Famous dishes such as sauerkraut fish and sauerkraut spareribs are made with it as the ingredient.
