Braised Yellow Croaker with Tofu

Ingredients for yellow croaker and tofu: 1 yellow croaker (about 500 grams), 1 piece of tofu, appropriate amounts of onion, ginger, and garlic, 1 tablespoon of soybean paste, 1 tablespoon of cooking wine, 2 tablespoons of soy sauce, 1 teaspoon of sugar, a little salt, and appropriate amount of pepper.

How to cook yellow croaker and tofu

1. After cleaning the yellow croaker, wipe off the moisture and make two oblique cuts on both sides of the fish (deep enough to get close to the bones but not cut through); cut the tofu into small pieces, cut the green onion into sections, cut the ginger into shreds, and mince the garlic for later use;

2. Heat 3 tablespoons of oil in a hot pan, add the yellow croaker and fry until both sides are golden brown;

3. Add scallion, shredded ginger and minced garlic and sauté until fragrant;

4. Add soybean paste, other seasonings and water (covering the fish) and bring to a boil;

5-6. Add tofu and bring to a boil, then turn to medium-low heat and continue cooking for about 15 minutes until the soup is slightly dry (it doesn't need to be very dry, tofu and fish soup is great with rice).

Warm Tips:

1. Do not turn the yellow croaker over when frying. Turn it over and fry the other side when one side turns golden brown.

2. Marinate yellow croaker with cooking wine and white pepper to remove the fishy smell

3. The nutritional combination of fish and tofu is more scientific.

4. After frying the fish, pour in boiling water and the soup will turn into a thick white color.

5. After frying the fish, spray some balsamic vinegar on it to remove the fishy smell.

6. Leave some soup and mix it with rice.
