1. Clean the yellow croaker, make a few cuts on its back, spread a small amount of salt evenly and marinate for about 20 minutes (a small amount of salt is enough, not too much, because you will add steamed fish soy sauce at the end)

2. Press the fermented black beans with the back of a knife and chop them into small pieces.

3. Take a fish plate and place ginger slices and scallions on the bottom of the plate.

4. Move the marinated fish to the fish plate, put ginger slices on it (also put ginger slices and scallions in the fish belly), pour a tablespoon of cooking wine, sprinkle with crushed black beans, and then spread half of the chopped pepper.

5. Put water in the pot and bring it to a boil, then put the fish in and steam over high heat for about 8 minutes.

6. Take out the steamed fish and pour out the juice from the fish dish (this juice is where the fishy smell is, so it is recommended to pour it out)

7. Pour a tablespoon of steamed fish soy sauce on the fish

8. Add the remaining half of the chopped pepper and sprinkle with chopped green onions. Heat cooking oil in a pan and pour over the fish.
