1. Raw materials

1. Main ingredients: 1 fresh large yellow croaker (weighing about 800 grams), 100 grams of tofu, 30 grams of soaked mushrooms, 25 grams of winter bamboo shoots, 25 grams of green vegetables, and 50 grams of fatty pork.

2. Seasoning: cooking wine, salt, onion, ginger, sugar, MSG, wet starch, peanut oil, sesame oil, and clear soup in appropriate amounts.

1. Remove the scales, gills and internal organs of the fish, wash it, and use a knife to make multiple cross-shaped cuts on both sides of the fish. Crush the ginger with a knife. Cut the green onion into sections. Cut the fatty pork into slices. Remove the stems of the mushrooms, wash them, and cut them in half. Cut the winter bamboo shoots into slices, wash the green vegetables and cut them into sections. Cut the tofu into 2 cm square pieces.

1. Cut the soft tofu into pieces and soak it in hot salt water;
